Fine-textured red residual soil on a calcareous substrate with sparse rocky outcrops. The famous red tint of the soil is the result of a large presence of iron oxides

Vinification

Manual harvesting of the slightly overripe grapes; destemming-crushing, pre-fermentative maceration at 8°C for 24-48 hours. Thermo-controlled maceration and alcoholic fermentation with selected yeasts for about 10 days at 24-26°C. Final racking with soft presses

Ageing

Malolactic fermentation in stainless steel and subsequent ageing in
French and American oak barriques for 12 months

Tasting notes

Deep and elegant ruby red colour; ample and complex bouquet, fruity with notes of plums and cherry jam flavours enriched by a light spice and notes of tobacco. A full-bodied wine, soft and rich in noble tannins, finished with notes of cocoa, coffee and vanilla
